To avoid waste and deflect whiners who say they hope they never see turkey again, I buy ingredients to conjure up tasty meals with Thanksgiving leftovers at the same time I buy food for the Thanksgiving feast. This way, I am ready the next day to prepare meals that don’t feel like leftovers. Given the multiple dishes typical for the holiday dinner, this one-dish meal has become one of my favorites.
TURKEY AND NOODLES
Servings: 4
3 cups cooked turkey, in bite-size pieces
18 ounces turkey gravy (chicken gravy works too if you ran out of turkey gravy)
3 cups egg noodles, cooked (6 ounces dry)
1/2 teaspoon onion powder
3/4 cup frozen peas, thawed
Salt and pepper to taste
In a large skillet over medium-high heat, combine all the ingredients and bring to a simmer. Cook, stirring occasionally, for about 8 minutes. Serve immediately.
